Is there any way to add a default piece of content into the full site editor view when you use a PHP template? For example, I use category as PHP but then there is no default wording in the wp interface - it renders properly in the published view.

Not sure if I get you right, but do you mean when you are creating a template like a category template, that there is a preview with one category from your site which has all the data in it?
There is a feature called “import WP Content”, maybe that’s what you’re looking for?
